Kerala Aviyal Recipe in Kerala Style Avial is a South Indian curry which is a mixture of varieties of vegetables and coconut and is common in Kerala, seasoned with coconut oil and curry leaves.
Pumpkin, Ash-gourd, snake-gourd, yellow cucumber, raw plantain, yam, beans, eggplant, carrot-500 gm
Coconut - 1 piece
Green chilli - 5
Curd - 1/2 cup
Turmeric powder - 1 tsp
Red chilli powder - 1/4 tsp
coconut oil -1/2 cup
Cut all the vegetables in long rectangular shape. Place a kadai on the stove and add all vegetables. Put turmeric powder , red chilli powder, salt and coconut oil . Close the vessel and cook. After sometime open the lid and stir. No need to add water in this recipe. Meanwhile grind coconut, green chillies and cumin seeds in a mixer grinder. No need make a paste, only crushing. After 7 -8 minutes , when the veggies become soft, add curd. stir . When the water absorbed, add the crushed coconut mix . Mix well and add curry leaves and coconut oil. Again stir. Now the avial is ready to be served.
