WHAT I EAT IN A DAY (Vegan + Gluten Free) | Chocolate Pancakes Recipe

BREAKFAST: Chocolate Pancakes
- 1/2 cup almond meal
- 1/2 cup buckwheat flour
- 1/4 cup cacao powder
- 1 tsp baking soda
- 1/2 cup almond mylk
- splash of vanilla
- 1 tbsp rice malt syrup
- 1 flax egg (1 tbsp flax meal + 3 tbsp water)
(served with strawberries and home-made hazelnut butter)
Hazelnut Butter:
- handful of roasted hazelnuts
- splash of almond mylk
- 1 tbsp rice malt syrup
- crack of salt

LUNCH: Avo + Chickpea Smash
- 1 x clove of garlic, chopped
- 1/2 can chickpeas, minced
- sprinkle of cashew parmesan (recipe coming soon)
- 2 x slices of GF bread
- 1 x avocado, mashed
- squeeze of lemon

DINNER: Easy Tomato Pasta
- GF Chickpea Pasta (pulse pasta)
- 8-10 cherry tomatoes
- 1 x clove of garlic, chopped
- spaghetti bolognese herbs
- sprinkle of cashew parmesan (recipe coming soon)
